• INGREDIENTS •
2 free range eggs
1/4 cup solid coconut oil, melted
1/4 cup brown sugar
1/2 cup coconut milk or almond milk
1 teaspoon pure vanilla extract
1 pinch of salt
1/2 cup coconut flour
2 tablespoons of 'Crawlers Cricket Flour’ - buy from here
1/3 cup gluten & dairy free chocolate chips
• METHOD •
Preheat oven to 180 degrees.
Line 2 baking sheets with baking paper or silicone baking mats.
In a medium bowl, whisk together eggs, melted coconut oil, brown sugar, coconut milk, vanilla and salt.
Using a rubber spatula, fold in coconut flour, 'Crawlers' Cricket Flour and the chocolate chips.
Scoop cookie batter onto prepared baking sheets using a small ice cream scoop or two teaspoons.
Bake for 10 to 12 minutes, or until golden.
Cool completely before removing from the pan.
